I was lucky enough to be part of a press trip to the wonderful Belevedere Hotel in Mykonos last week. I was there, with two journalists, during the annual visit of world renowned chef, Nobu, who has his only open air restaurant, The Matsuhisa, at the hotel. Nobu-san was a joy to meet and clearly enjoys the brief stay on the sunny Greek island. There’s time for him to relax, take his team of chefs out to a local taverna and to talk to Nikolas and Tasos Ioannidis, who run The Belvedere. We were delighted to see Nobu in action, demonstrating signature dishes as well as recipes which reflect Greek ingredients. For example we watched him create a delicious salsa with olives, capers, tomatoes, cucumbers and onion, but mingled with special spices and soy sauce and combined with fresh tuna. Delicious. Wave upon wave of sashimi and sushi arrived on our table by the pool, with views over the town, the sea and the setting sun. It was a very special experience indeed!
